Coconut Crusted Tilapia

Ingredients:

  •  1 c. unsweetened coconut

  • 2 T flour

  • 1 T Cajun seasoning

  • 1 tsp. garlic powder

  • 4-6 oz. tilapia fillets

  • 1/2 c. flour

  • 2 eggs

  • 1/2 c. canola oil

Apricot Sauce:

Mix together

  • 1/2 c. apricot jam

  • 2 tsp. brown mustard

  • 1 tsp. horseradish 

Directions:

Mix coconut, 2 T flour, Cajun seasoning, and garlic powder.   Dip fillets in remaining flour, then egg, and then coconut mixture.  Press mixture onto fillets. Fry in coconut oil.  Serve with apricot sauce.
