Pike Glazed with Honey


  • 1 pike (2 lbs.)

  • 3 T flour

  • 2 T brown sugar

  • butter

  • cinnamon

  • cloves

  • 1/2 c. apple juice

  • 1 T honey

  • lemon rind, finely grated


Wash and dry pike thoroughly and cut into 4 pieces.  Dredge in a mixture of the flour and brown sugar.  Place in a well-buttered pan and sprinkle with cinnamon and several cloves. 

Bake at 350 degrees for 35 minutes.  Halfway through the cooking, baste with the apple juice sweetened with honey.  Sprinkle grated lemon rind over the pike.
